The Angels' Share describes the amount of liquid that evaporates when ageing the whisky in barrels. About 2% of the Scotch is lost during the ageing process. According to a  global brand ambassador for Johnnie Walker, about — 29 million gallons — evaporate out of Scotland’s precious barrels every single year. But luckily there is plenty left for us to enjoy!
